Vendaikka / Lady's finger Kitchadi from Kerala


Ingredients needed for Vendaikka Kitchadi
2 tbsps Vendaikka cut in to thin rounds
1/2 cup coconut oil ( oil needed for deep frying vendaikka to a golden colour )
1 cup fresh grated coconut
2 green chillies
1 1/2 cups curds ( a little sour not very fresh )
Salt to taste
For tempering Vendaika Kichadi
2 tsps oil
1/2 tsp mustard seeds
handful curry leaves
1 long red chilli broken into bits / 2 small chillies, just  slit

How to prepare Vendaikka Kichadi?
First heat the coconut oil in a fryingpan, deep fry the sliced venadaikka / Lady's fingers to a golden brown colur. Keep aside.
Grind fresh coconut and green chillies to a smooth paste . Blend with the beaten curds and salt. Keep aside.
Heat a fry pan for tempering. Add oil, splutter mustard seeds. Add red chillies and curry leaves.
As they get brown, pour over the ground coconut and curd mixture.  Check for salt.
Just before you serve the Kichadi, add the fried vendaikka and mix well.
