Mutton Biriyani, Kerala Style


Ingredients needed for Mutton Biriyani
1 kilo mutton
1/2 kilo basmati rice
oil as required
1 kilo onions sliced finely
20 green chillies
2 tbsps ginger crushed
2 tbsps garlic crushed
4 tomatoes medium sized - sliced fine
2 cups coriander leaves
2 cups mint leaves
Salt to taste
1 tbsp garam masala
2 tbsps lime juice 
1/4 cup fresh coconut paste
1/2 cup melted ghee
3 tbsps oil

How to prepare Mutton Biriyani Kerala Style?
Clean, wash and cut mutton in to uniform sized pieces.
Clean and soak the basmati rice for half an hour. Drain. 
Boil water in a big vessel, cook the rice till 3/4 ths done. Drain and keep aside.
Heat oil in a pan, fry one third of the sliced onions to a golden brown colour , drain and keep aside.  Add a pinch of salt to the onions while it is frying, to get them golden evenly.
In the remaining oil add the remaining sliced onions and fry till they are golden.
Add crushed ginger, garlic and green chillies. When the ingredients blend together nicely add sliced tomatoes, a little of the mint and coriander leaves and the mutton pieces. Mix well and add a little salt to it.Cook till the mutton pieces get tender.
Now when all the ingredients blend well in to a gravy like consistency add garam masala powder, coconut paste, lime juice, remaining mint and coriander leaves. Mix well.
When the gravy starts boiling nicely add the cooked and drained rice with melted ghee in to it.
Gently mix the rice well with the gravy. Cover tightly with a lid and keep it on simmer flame for about half an hour.
