Koorka Chilli fry


Ingredients needed for Koorka Chilli fry
2 cups Koorka cleaned and cut in to small pieces
1/2 cup small onions finely chopped
1 tsp red chilli powder
1/2 tsp turmeric powder
Salt to taste
1 tbsp oil
1/2 tsp mustard seeds
few curry leaves

How to prepare Koorka Chilli Fry?
Cut koorka in to small pieces and immerse them in a little water. Cook with a little salt and turmeric powder till they are tender. Keep aside.
Heat oil in a fry pan, splutter mustard seeds and then add curry leaves.
Add the finely chopped small onions and saute till they are golden.
Add red chilli powder, turmeric powder and mix well till the raw smell goes.
Add the cooked koorka to the pan, stir nicely so that the masala coats the koorka nicely.
Cover and simmer for 2-3 minutes to retain the flavours and blend the ingredients nicely.
Open the lid and dry out the moisture. Your Koorka chilli Fry is ready to serve.
If you like it a little more crispier add a little more oil and mix well.
Stir fry a little till it turns crispy on the outside.
Serve with rice / phulkas etc as a side dish.
