Chilli Mushrooms


Ingredients needed for Chilli mushrooms
200 grams button Mushrooms
1/2 cup chopped onions
2 tsps spring onions ( just the onion parts )
2 tsps chopped Garlic
1 tsp chopped green chillies
2 tsps chopped Ginger
1/2 cup chopped Capsicum
2 tsps Red Chilli Powder, mixed to a paste, with a tbsp water
leaves of Spring Onions – handful, chopped
1 tbsp Corn Flour
1 tbsp Maida
1 tsp Vinegar
1 tsp Soya Sauce
Pepper Powder to taste
a few Coriander Leaves for garnishing
Oil as required
Salt to taste

How to prepare Chilli Mushrooms?
If using small sized button mushrooms you can keep them whole. If they are big in size quarter them. If you are planning to serve as a finger food, chop in to small pieces.
Mix the corn flour, maida, salt, soy sauce and pepper powder in a bowl and add the mushrooms. Mix well and see that the mix coats all the mushrooms nicely.
Heat oil in a deep frying pan over medium flame and deep fry the mushrooms till they are golden and crispy.
Remove and drain then a kitchen towel to remove excess oil.
Just keep one to two tsp oil in the pan and remove the excess. Saute ginger, garlic and green chillies, when they are golden add the chopped onions. Saute till the onions turn transparent.
Now add the red chilli paste and a little water for it to cook without getting burnt.
Once done add the mushrooms and mix well.See that the masala coats the mushrooms nicely. Garnish with chopped coriander leaves and spring onion leaves.
Serve hot as a side dish or just by itself as a snack.
