Chakka Pradhaman / Jackfruit Kheer


Ingredients needed for Chakka Pradhaman
4 cups jack fruits cleaned and the stones removed
400 grams Jaggery
a pinch Cardamom powder
1 tbsp ghee
2 cups of thick coconut milk (taken from 2 coconuts )
3 cups of Second / thin milk
1 tbsp ghee
1 tsp coconut cut into small pieces ( Thenga Kothu )
1 tbsp cashewnuts broken
1 tbsp kismis

How to prepare Chakka Pradhaman?
Cook Jack fruit pieces in a pressure cooker adding enough water to cook the fruits.
Melt Jaggery in a little water, strain and add to the cooked jack fruit.
Now add the cardamom powder, ghee to the mix and fry well till the water gets completely evaporated and the ghee starts oozing out in the sides.
Heat the remaining ghee in a thick bottomed fry pan, fry coconuts, cashewnuts and kismis to a golden colour.
Add the sauteed jack fruit to the pan and mix well.
Now add the second / thin milk to the jack fruit mix and stir well.
As it thickens add the first / thick coconut milk and stir well.
Remove from fire before it comes to boil.
Serve either hot or cold.

Notes
Chakka Pradhaman can also be prepared with the already available Chakka Varattiyathu.
Chakka Varattiyathu is usually made when ripe Jack fruits are available in plenty / during the Jack fruit season.
