Thakkali Murinjakkaya Aviyal



Ingredients needed for Thakkali Murinjakkaya Aviyal
2 cups Tomatoes cubed
2 tbsps Onion sliced
3 Green chillies slit
1 cup Drumstick/murinjakkaya, cut into 3 inch pieces and slit
handful curry leaves
1/2 tsp Turmeric powder
1 tsp Coriander powder
1 tsp Chilly powder
Salt to taste
1 cup fresh grated coconut
3 tsps Coconut oil

How to prepare Thakkali Murinjakkaya Aviyal?
In a pan put in chopped tomatoes, onion, slit green chillies, drumstick pieces, turmeric powder, chilli powder, coriander powder and salt to taste with just enough water for the vegetables to cook.
As it starts boiling, simmer and cook covered till they are three fourths cooked.
Grind the grated coconut in to a smooth paste and add to the cooked vegetables. Mix well and cook until done.
Pour 2-3 tsp coconut oil and a few curry leaves.
Mix well and keep aside for 10 minutes.
Serve hot with rice.
