Palada Pradhaman


Pradhaman is nothing but a Kheer or a type of Payasam known in the other parts of India. Palada is a typical kerala dish which is prepared with milk and Ada ( made of rice flour ).

Ingredients needed for Palada Pradhaman
1/4 cup Ada ( you can use the ready made ada which you get in the supermarkets)
2 -3 cups of water
First clean and wash the ada from the packet, two or three times in running water.
Boil water, add the ada, cover and cook till the ada is tender. Drain the water and keep it aside.

4 -5 cups of milk
1 cup sugar
2 tbsps butter
2 -3 green cardamom (optional, not necessary)

How to prepare Palada Pradhaman?
Heat butter in a fry pan, fry the cooked ada till it turns slightly pinkish. Remove.
Boil the milk. When it is boilingm, add the fried ada. Simmer and cook till the milk thickens and the ada is pulpy and very soft.
Add the sugar. Check it to see if the sweetness is right for you. You can also add condensed milk if you like but lessen the milk and sugar if you do.
As it boils the milk will get thickened and come to a light pink in colour. Remove from fire and add the whole cardamom.
Remove the cardamoms just before you serve the delicious Palada.
